What changes when a HEIC becomes a JPG

HEIC wraps HEVC-compressed image data and can carry things a JPG has nowhere to put: 10-bit colour, the depth map your iPhone uses for Portrait mode, and the extra frames behind a Live Photo. Converting keeps the still picture and drops the rest. On images with long smooth gradients — a sunset, a studio backdrop — you may see faint banding where 10-bit tones are quantised down to 8-bit. What you get back is a file that opens on Windows, in older versions of Photoshop, and in every upload form that rejects .heic. When to keep the HEIC instead

If your photos live on an iPhone or Mac and get shared through Photos, AirDrop or iCloud, HEIC is the better file: roughly half the size at the same quality, and Apple's apps read it natively. Convert the copies you are sending somewhere else — a job application, an insurance claim, a print shop, a web form — rather than the whole library. Converting everything doubles your storage to buy compatibility you may never need, and the JPG copies will not track edits you make later in Photos.
